Because it’s Valentines Day, just like two hearts are better than one; two posts are better than one!! Of course I wouldn’t leave a Friday without sharing a recipe!! It’s great to curl up with while watching a movie with your sweetheart…not to mention some fibre, antioxidants and some healthy fats!!
Dark Chocolate Covered Popcorn, with Shredded Coconut!!
1/2 cup popcorn kernels
2 tbsp organic coconut oil
2 tbsp unsweetened coconut shavings (optional)
2 large pieces of dark chocolate
Sea Salt (optional)
In a saucepan, melt coconut oil on medium heat until it completely coats the bottom. Take popcorn kernels and add to the oil once it has melted. Take a tight-fitting lid and turn heat up high, allowing the popcorn to pop. Make sure that at the point that there is 4 sec silence between pops you remove immediately from the heat in order to prevent burning and add to a large bowl. Melt your chocolate in a smaller saucepan on low to med heat, making sure to stir often. Once completely melted, drizzle some over the popcorn and toss and then drizzle the rest on and toss. While the chocolate is still warm, add coconut shreds and toss, along with a sprinkle of sea salt. Chill in the fridge for 30 min then serve and enjoy!!
