Maple Almond Granola Topped With Fresh Fruit!!

Sometimes in the morning I just can’t help but crave a granola cereal with fresh fruit and coconut milk.  I have created my own whole food version of this that gives you the satisfaction of a hearty cereal without the added sugars and over processing that most boxed cereals incorporate!!

Using gluten-free oats, nuts, seeds, dried fruit and natural sugars, I will share with you this breakfast delight that I absolutely love and as promised it includes one of my favourite tropical fruits, the coconut!!

 

What you will need:

Granola – (Makes 13 Cups)

5 cups gluten-free rolled oats*
2 cups raw almonds, chopped
1 cup walnuts, chopped
1 cup raw pumpkin seeds
1 cup raw sunflower seeds1 Tbsp ground cinnamon
2 tsp  ground ginger
1 tsp sea salt
3/4 cup pure maple syrup
1/2 cup coconut oil
1 1/2 cups sultana raisins
1/2 cup (125 mL) flax seeds

*Also feel free to substitute buckwheat or millet flakes.

Preheat oven to 225 F (110 C).

Combine oats, nuts, seeds, and seasonings in large bowl and mix.
Heat syrup and oil in saucepan just until warmed. Stir together and drizzle over oat mixture. Using your hands, toss together until evenly blended.

Spread mixture out onto large rimmed baking sheets. Bake in preheated oven for 45 minutes, stirring often until crisp and dried. Mixture should be lightly golden. Remove and cool before adding flaxseed.

Store in tightly covered container in the refrigerator or freezer.

Serve 1/2 cup in a bowl with Organic Coconut Milk (find in your milk section with almond and soy – not canned coconut milk), add  fresh fruit of your choice; I love kiwi, blueberries and strawberries.
