Sweet Meets Spicy With This Winter Warm Up: Caribbean Coconut Soup!!

I wanted to start off the week by posting an incredible recipe that I made a couple weeks ago.  I love finding unique recipes and manipulating them to be my own…  in this case, it turned out incredible! Soups are a great way to get in a variety of health promoting vegetables, herbs and spices.  It is also a wonderful way to warm your body from that winter chill…

I love taking my dogs for a walk, then coming home to bowl of soup…it makes the long winter seem not so bad!!  I promise…if you love coconut and a little spice, this soup is for you !!  Give it a try!

CARRIBEAN COCONUT, SWEET POTATO AND ZUCCHINI SOUP

2 1/2 tbsp Coconut Oil

1 Onion, peeled and sliced

3 Cloves of garlic, minced

1 Sweet Potato, diced

1 1/2 tbs paprika

1 tsp Crushed chilli peppers

1 tbs Turmeric

1 tsp Black pepper

1 tbs tamari

3 1/2 Can of crushed tomatoes

5 cups Vegetable stalk

1 tbs Organic Cane Sugar

2 Medium zucchini, cubed

1 Small can of coconut milk

1 tsp Himalayan Salt…add more to taste

Heat coconut oil over medium heat in a soup pot.  Add onion, garlic, sweet potato, spices and tamarin.  Cook for 5 min until onion is soft.  Add tomatoes, vegetable stalk and sugar. Simmer until sweet potatoes are cooked. Add in coconut milk and Himalayan salt and let simmer for 5 min.

Garnish with shredded coconut and serve.

This Soup is dedicated to my grandfather Edgar Roy Boone, who passed away recently.  He had a love for food and I think this soup would make him proud ~ February 11, 1935 – February 1, 2016.
