A 15 Minute Yummy Kale Salad With a Lemon, Tahini Rub!!

Making healthy food doesn’t have to be complicated!!   I love throwing together my creative rendition of a Kale Salad. In as little as 15 minutes you can whip up this tasty, hearty salad:) Kale is a very nutrient dense, green that takes on any flavour beautifully. I love using Kale as my salad base because it is more substantial as a meal then other leafy greens!! In this version I use minimal ingredients, making it super simple!!  Cherry tomatoes and cucumber make up the bulk of the salad, with a tahini rub giving it a unique flavour, enriching it with minerals, healthy fats and protein. Topped with dried golden berries, a powerful known superfood…this salad is diverse from a nutritional standpoint and exactly what you want from a salad:)  I make this salad as a quick  lunch option… Give it a try and let me know what you think….I would love to hear your comments!

Kale Salad

4 Kale Leaves (washed and chopped)

1/2 cup Cherry tomatoes, diced

1/2 cucumber, diced

1/4 cup Dried golden berries


Tahini Rub 

3 tbs Extra virgin olive oil

1/2 lemon

!/2 tsp Himalayan salt

3 tsb tahini


Wash and chop Kale and vegetables, then toss into a bowl.  Mix up dressing in a separate dish, then mix.  Pour dressing over salad, and use your fingers to rub in the tahini mixture…toss and top with dried golden berries!! Voila !!  A 15 min lunch!!
