As promised on my Instagram post – here is the most amazing vegan “Chicken, Caesar Salad” recipe – meat eaters, won’t even know the difference!! In as little as 15 minutes – you can sit down to this delightful, ethical and healthy meal:) Looking forward to inspiring more health and wellness around the globe!!
Vegan "Chicken Caesar" Salad
- 6 cups Organic Mixed Greens
- 1 cup Organic Cherry Tomatoes
- 1/4 cup Hemp Seeds
- 3 tbs Coconut Bacon Optional
- 1 Package Slow roasted chicken - Tofurky
- 1/4 cup Plain Hummus
- 1 tsp Spicy Mustard (I add hot sauce to regular mustard)
- 1/2 tsp lemon zest
- 2- 3 tbsp lemon juice
- 2 tbsp fresh minced garlic
- 1 - 2 tbsp extra virgin olive oil
- 1 tsp maple syrup
Heat skillet on medium heat, with a touch of olive oil. While that is heating, prepare salad in a bowl. Add all dressing ingredients into a food processor and puree - add more olive oil/ maple syrup, until desired taste and texture. While that is processing - cook Tofurky Chicken as package describes. Mix salad and dressing - top with vegan - chicken and enjoy!!
