Vegan "Chicken Caesar" Salad

Ingredients

  • 6 cups Organic Mixed Greens
  • 1 cup Organic Cherry Tomatoes
  • 1/4 cup Hemp Seeds
  • 3 tbs Coconut Bacon Optional
  • 1 Package Slow roasted chicken - Tofurky

Dressing

  • 1/4 cup Plain Hummus
  • 1 tsp Spicy Mustard (I add hot sauce to regular mustard)
  • 1/2 tsp lemon zest
  • 2- 3 tbsp lemon juice
  • 2 tbsp fresh minced garlic
  • 1 - 2 tbsp extra virgin olive oil
  • 1 tsp maple syrup

Instructions

  1. Heat skillet on medium heat, with a touch of olive oil. While that is heating, prepare salad in a bowl. Add all dressing ingredients into a food processor and puree - add more olive oil/ maple syrup, until desired taste and texture. While that is processing - cook Tofurky Chicken as package describes.  Mix salad and dressing - top with vegan - chicken and enjoy!!
