Black Bean and Dill Veggie Burgers

With burger season in full motion, these are a wonderful and healthy option that you can whip up in 20 minutes.  Black beans, fresh dill and finely chopped garlic make these burgers gourmet!!  Top them with tzatziki and serve with a fresh salad for the ultimate meal!!

 

Black Bean and Dill Burgers

1 can black beans (338 ml)

1/4 cup freshly chopped dill

1 egg

3/4 cup bread crumbs

1 clove of garlic finely chopped

2- 3 table  extra virgin coconut oil

Tzatziki to taste

 

How to Make

Drain and rinse black beans then add to a mixing bowl. Combine dill, garlic and egg with the beans then mix to point that mixture becomes a paste (use a blender if you prefer).  Add bread crumbs as needed until mixture is no longer sticky and you can form a patty (you may need to add more then my recipe calls for, depending on how wet the beans are).

In frying pan, heat up 2 tablespoons of coconut oil on medium heat until oil is hot.  Form patties with the mixture and add to frying pan cooking 2-3 min or until golden brown on each side.  Add extra coconut oil as needed, be sure not to let it dry up or may start to smoke.

Serve burgers with a dollop of tzatziki sauce on top, no bun required!!  Enjoy with a fresh spinach salad and 1/4 avocado slices.  A great meal idea for anyone containing all the proteins, fats and carbohydrates your body needs!!
