Tara’s Cancer-Fighting Burrito Bowl; Promoting a Cancer-Free Life!!

As I sit outside enjoying the sunshine, I am embracing the calm and peaceful sounds of nature feeling inspired to focus todays blog on gratitude; feeling grateful for my good health everyday.

Over the last month, the theme has been Cancer; a disease process that occurs in the body over a long period of time and will thrive if given the right environmental conditions. As I have mentioned in previous posts, 85% of Cancers can be prevented just by making different lifestyle choices. I have been using my spare time to read a book called The Gerson Therapy, a very eye opening, yet practical approach to healing the body of many degenerative diseases.  Dr. Max Gerson was a German born American physician who developed the Gerson Therapy: Activation of the “body’s extraordinary ability to heal itself through an organic, vegetarian diet, raw juices, coffee enemas and natural supplements”(1).  I was introduced to this therapy by a very special friend who had treated her own Breast Cancer through Gerson’s Therapy.  After undergoing this 12-week intensive nutritional therapy, she miraculisly tested Cancer-Free within months (Although not all patients treated with this therapy, have this type of success..it gives peace of mind knowing there could be a chance).

Many of the foods that the earth provides us with have Cancer fighting properties and I wanted to share these foods with you, along with a health promoting and Cancer-Fighting recipe that I enjoyed this week!!

 

Cancer Fighting Foods:

Cruciferous veggies:  Cauliflower, cabbage, kale, broccoli

These foods “contain cancer-fighting properties. but broccoli is the only one with a sizable amount of sulforaphane, a       particularly potent compound that boosts the body’s protective enzymes and flushes out cancer-causing chemicals, says Jed Fahey, ScD. A recent University of Michigan study on mice found that sulforaphane also targets cancer stem cells—those that aid in tumor growth”(2).

Mushrooms: Shitake, Reishi and Chaga

These mushrooms are used all over the world to fight Cancer and enhance the immune response (3).

Beans: Black & Navy

“A study out of Michigan State University found that black and navy beans significantly reduced colon cancer incidence in rats, in part because a diet rich in the legumes increased levels of the fatty acid butyrate, which in high concentrations has protective effects against cancer growth. Another study, in the journal Crop Science, found dried beans particularly effective in preventing breast cancer in rats”(4).

Garlic:

“Phytochemicals in garlic have been found to halt the formation of nitrosamines, carcinogens formed in the stomach (and in the intestines, in certain conditions) when you consume nitrates, a common food preservative, Béliveau says. In fact, the Iowa Women’s Health Study found that women with the highest amounts of garlic in their diets had a 50 percent lower risk of certain colon cancers than women who ate the least”(5).

I have created my own rendition of a Burrito bowl, including many of these Cancer- Fighting Foods.  It is purely plant based, rich in a wide variety of phytonutrients, vitamins and minerals, which are all important qualities that support a healthy immune system and aid in the fight against Cancer!!

 

Tara’s Cancer-Fighting Burrito Bowl

Makes: 4 Servings

Base:

1 cup cooked brown rice

1 cup cooked black beans

1/2 cup Daiya cheddar cheese

Veg Toppings: 

2 Cups shredded red cabbage

1 red pepper, diced

1 orange pepper, diced

2 green onions, diced

2 tomatoes, diced

Vegan Guacamole:

2 Avocados

2 limes

1 garlic clove

Himalayan salt

Vegan Sour Cream: 

1 cup soaked cashews (Soak for 1-2 hours and drain)

1/2 lemon

Himalayan salt

 

Instructions: 

(Make sure to have your rice and beans cooked and all your veggies diced).

1. Prepare in food processor: Guacamole – add all ingredients and process, add salt and lemon as desired and set aside

Vegan Sour Cream – add all ingredients, process, salt as desired and set aside.

2. Prepare your bowl in a layering fashion: Brown Rice, black beans, Daiya cheese,  vegetables, guacamole, vegan sour cream and top with a organic salsa if you like.

Mix well and enjoy!!
